Digby Pines Chef Dale Nichols Pairs With Artist Lynda Shalagan To Create A Visual Delicacy

HALIFAX, NS – Should we use it as a cookbook or a decorative coffee book? That will be the dilemma for those who take home Chef Dale Nichols and artist Lynda Shalagan’s new book, From Palette to Palate – Culinary Artworks from the Digby Pines Kitchen.

“Those who are passionate about culinary arts see recipes as just that…art,” said Nichols. “There is such a creative process that goes into creating a recipe and seeing it come to fruition, having Lynda’s artistic representation of these dishes was the perfect complement.”

Published by Nova Scotia owned SSP Publications, Nichols and Shalagan’s collaboration resulted in a beautiful visual interpretation of some of the most mouth-watering dishes that are plated at the Pines each summer season.

The cookbook features 50 dishes including hot appetizers and salads, to main courses and desserts. Within these featured dishes are well over 150 recipes Nichols has used over the years. And of course, those looking for ways to enjoy Digby’s world-famous scallops won’t be disappointed. Along with the cookbook, SSP Publications created a 2019 calendar featuring 13 recipes with paintings and photos.

“This was an incredibly rewarding project,” said Shalagan. “Cookbooks are often very personal treasures passed down from family member to family member. We believed that having paintings as well as the typical photographs for bringing these recipes to life would make the book all the more unique in character.”

Nichols has been the head chef at the Pines’ since 2009, before which he served as the executive chef for several prominent hotels including the Delta Hotel in Halifax. Shalagan is a well-regarded painter with works appearing both locally and nationally while also teaching art part-time at the Sacred Heart School in Halifax. 

Books are available at Chapters and Indigo outlets as well as online here. The official book launch will take place at the Digby Pines on May 27.
